Luxury Dining Comes to Maui With Nobu

Luxury dining reaches new heights in Hawaii as Nobu opens its first Maui location at the iconic Grand Wailea, A Waldorf Astoria Resort. The world-renowned restaurant, founded by Chef Nobu Matsuhisa, Robert De Niro, and Meir Teper, now adds its signature culinary experience to the island’s high-end hospitality scene—marking its second outpost in Hawaii.

Situated at the heart of the oceanfront resort, the newly opened Nobu Grand Wailea Maui spans an impressive 13,000 square feet. The launch comes on the heels of the resort’s $350 million renovation, further enhancing its appeal as a global destination for refined travelers.

Guests can expect Chef Nobu’s signature Japanese dishes infused with South American flair, along with an exclusive selection created just for Maui. Classic favorites like Black Cod with Miso, Yellowtail Jalapeño, and Rock Shrimp Tempura are joined by locally inspired dishes such as line-caught fish with black bean sauce. Dessert takes a tropical twist with Maui-only creations like a Kona Coffee-infused tres leches cake and a pavlova made with Laie Vanilla and blood orange sorbet.

Designed by the acclaimed Rockwell Group, the restaurant’s interior is a visual statement of elegance and scale. Guests can choose between indoor and al fresco seating, enjoy a dynamic sushi bar, or book the private dining space for a more intimate experience—all within an environment that celebrates the art of Japanese craftsmanship.

Nobu Grand Wailea Maui opens under the guidance of Executive Chef Kyle Marston, whose decade-long journey with Chef Nobu includes time at Matsuhisa Denver and Nobu Old Park Lane in London. He is joined by Head Sushi Chef Bora Oh, previously of Nobu Malibu, bringing together top-tier talent to lead the kitchen.

This opening also expands the Grand Wailea’s already impressive culinary program. Under Executive Chef Ryan Urig, the resort is home to destination restaurants like Olivine, which blends Italian tradition with Hawaiian ingredients, and Humuhumunukunukuāpuaʻa, a seafood and steakhouse focused on sustainability and freshness.

The debut of Nobu at Grand Wailea also sets the stage for further expansion, with another Nobu location set to open soon at the legendary Hotel del Coronado in California—another BRE Hotels & Resorts property.

With its exceptional location, exclusive menu, and elevated design, Nobu Grand Wailea Maui is poised to become one of the island’s most sought-after luxury dining experiences, appealing to both devoted fans of the brand and curious newcomers alike.
